Tramezzini with Avocado & Egg

Cut single slices of bread into quarters or cut off the crust, according to the size of toaster. Cut avocados into halves, remove pits, peel, and cut into long slices. Also cut eggs and tomatoes into slices.

Mix cream cheese with pesto and thinly spread onto the bottom half of the bread.
Spread egg, avocado, tomato, and arugula on top of cream cheese, avoiding the edge. Season to taste with salt and pepper, and cover with an additional slice of bread.

Toast in sandwich toaster for 3-4 minutes until golden brown. Cut in half diagonally and eat while still warm.

(Alternatively: Italian white bread without crust or sandwich toast)

2 Peruvian avocados

1 handful arugula

4 hard-boiled eggs

2 tomatoes

100 g (1/2 cup) cream cheese

4-5 tablespoons red pesto
