In a large bowl, combine the avocados, tomatoes, cheese, and bacon. Season to taste with salt and pepper. Add the olive oil and gently toss before serving.

1 pound fresh cheese (queso fresco, fresh mozzarella, farmer cheese, or other fresh soft cheese), cut into ¾-inch cubes

4 slices crisp bacon, crumbled Salt and pepper

3 tablespoons olive oil
