Avocado Ice Cream Sandwich
Blend avocado flesh together with yogurt, lime juice, and sugar until smooth. Season to taste with sugar and lime juice. Freeze the mixture in an ice cream maker. If it’s not available, fill the mixture into a flat form or bowl and put it in the freezer. Mix every 20 minutes until the ice cream mixture becomes smooth after 3 hours.
Use a spoon to scoop out some ice cream and place it on a wafer. Spread evenly. Place a second wafer on top and gently squeeze together to form the ice cream sandwich. Let it chill briefly in the freezer and serve as a dessert.

2 Peruvian avocados
400 g (1 ½ cups) plain yogurt, 3.5% fat
Juice from 2 limes
4 tablespoons brown sugar
1 package butter wafers or similar flat biscuits
